Our cafe found its name easily: it happened during a quiet moment of reflection in the stunningly-beautiful Mattise-designed Rosary Chapel in Vence, France. Little cafes and gourmet food shops throughout France, Spain and the U.S. also inspired the concept. Following a quick visit with the Mustard King of America, Brian chose the name, The Marvellous Mustard Shop for the other part of the business.

Journalists Brian Nolan and Hollander (Holly) Layte, with Holly’s childhood best friend, Heather Urrutia at their side, opened The Mustard Shop in October, 2000. The Cafe followed later. It began welcoming customers on February 2, 2001. While The Mustard Shop was an instant success when it opened, the Cafe was small when it began. It had only 14 seats. For two years, it only served food prepared by the famed Cafe Henri Berger Restaurant located in Hull, Quebec. In 2003, it added more seats, and it hired its own chef.

Its unique and beautiful art décor continues to inspire the food: in our open kitchen, where freshly-prepared meals are prepared, and only high-quality ingredients are used. Compliments continue to pour in. Truly, today, it must be said, ‘that this is a little business that could.’
